스페이강 가 캐런 마을에 있던 임페리얼은 지금은 문을 닫은 스페이사이드의 잊힌 증류소다. 1990년 빈티지의 이 보틀링은 잔에 맑은 황금빛을 담는다. 오크 캐스크에서 17년을 보낸 향은 사과와 보리엿, 들꽃이 또렷이 깃들어 있다. 입안은 바닐라와 배, 가벼운 향신료가 산뜻하게 번진다. 53.9도의 도수가 구조감을 더하며, 여운은 곡물의 단맛과 은은한 오크로 깔끔하게 이어진다.

This is much oakier, almost plankish at first nosing. Develops more nicely, on interesting – albeit most unusual – notes of green olives, warm butter and vanilla. With water: the wood comes out even more, as well as something like lemongrass. Unusual indeed
restaurant 맛 (팔레트)
much, much nicer than at first nosing when neat. Rounded, slightly candied and orangey, with the oak giving the whole a good structure here. Gets very spicy (wood). With water: it’s at this stage that it got really better. Orange marmalade and quince jelly, baklavas, candy sugar... Very enjoyable now
