테이스팅 노트
잔을 흔들고 코를 대면 풀과 꺾인 나뭇가지, 사과 껍질 냄새가 앞서고 건조한 맥아가 뒤를 받친다. 물을 조금 섞으면 흙내가 살아나고 딜과 아니스 같은 향이 새로 열린다. 한 모금을 머금으면 맑고 단 이탄에 레몬과 훈제 생선, 라임이 얹혀 서늘한 화이트 와인 같은 결을 만든다. 버번 호그스헤드에서 22년을 보낸 이 아카이브스 보틀링은 삼킨 뒤 장뇌 같은 서늘함이 이어진다.

With water: anchovies in salt. You have to like that – I do. Perfect. Also a growing medicinal side, between camphor and eucalyptus lozenges
