테이스팅 노트
아일라 북동 해안 카올 일라의 서늘한 바닷바람과 이탄 풍토가 밴 카올 일라 1991 개별 캐스크다. 버번 숙성이 남긴 옅은 황금빛을 띤다. 코에서는 사과 주스 같은 과일과 이탄 연기에 디젤과 광물, 옅은 파라핀이 겹친다. 56도의 도수로 입에서는 건포도와 왁스, 프랄린의 단맛에 짠맛과 시트러스가 더해진다. 아일라 특유의 연기와 원액의 개성이 앞서며, 여운은 이탄과 소금기로 길지는 않아도 또렷하게 남는다.

this one is different, fruitier and less sharp, more on apple juice at first nosing (plus peat smoke of course). Develops on rather bold notes of sulphur, diesel oil, paraffin, stones, with whiffs of hot praline, caramel and barbeque herbs. Notes of fino and toasted cake. Probably more interesting but also a little les clean…
restaurant 맛 (팔레트)
more sherry now, with notes of rubber, wax, praline, sultanas blending with more or less the same king of ‘citrusness’ as in the ‘Craig’ but also a little salt. Really playful, even if the finish isn’t too long. But the spirit really dominates the sherry now. Maybe trhat’s good news. Anyway, another good one, even if the sherry and the spirit sort of stay apart and don’t really create ‘a third dimension’. I can’t wait to taste the new Caol Ila official ‘Distiller’s Edition’ which we should be able to taste on Islay later on this month. 84 points for this one too.
