아일라 동쪽 해안 포트 아스케이그를 마주한 카올 일라는 거센 해풍 속에서 빚어진다. 1975년 증류해 21년을 채운 이 위스키는 옅은 밀짚빛을 띤다. 향에는 바다 소금과 갓 피운 모닥불 연기, 레몬 껍질이 또렷이 솟는다. 61.3도의 강한 도수가 입안에서 훈제 베이컨과 후추, 미네랄을 날카롭게 밀어낸다. 긴 여운에는 짭조름한 연기와 재의 기운이 오래 감돈다.
