잔을 돌리고 코를 가져가면 럼에 적신 초콜릿과 건포도가 한참 동안 앞자리를 지킨다. 기다렸다 다시 맡으면 석유와 구두약, 갓 바른 회벽 냄새가 끼어들며 스프링뱅크다움을 각인시킨다. 한 모금을 머금으면 47.8도의 술이 회초리처럼 마르게 지나가며 초콜릿과 전나무, 민트, 정향이 이어지고 리필 올로로소답게 유황은 보이지 않는다. 삼킨 뒤에는 짠기와 진한 홍차, 민트가 길게 남는다.

Then come dried apricots and a few wisps of crème de menthe. Very lightly oaked for now, leaning more towards singed fir wood than anything else

We’re soon heading toward dark tobacco and bitter chocolate, paired with clove and juniper, plus a slight touch of salted grapeseed oil—that’s pure Springbank. No sulphury notes, which one might have feared in this vintage, especially in a sherry version
