잔을 돌리고 코를 깊이 넣으면 러비지와 겨자, 만사니야 같은 마른 셰리의 짠 향이 먼저 튀어나온다. 피노 셰리 우드가 남긴 초록 호두와 뱅 존, 올리브 냄새가 뒤를 이어 세로로 곧게 선 향의 구조를 만든다. 한 모금을 머금으면 훈제한 레몬과 리몬첼로, 솔 리큐어가 지나가고 중반에 힘이 잠시 꺼졌다 돌아온다. 삼키면 짜고 고기 같은 맛이 레몬과 맞물려 마무리를 길게 끈다.
