옅은 금빛 아래 흙과 채소의 세계가 펼쳐진다. 1991년 원액을 담은 이 롬바드 보틀링은 스카치에서 흔치 않은 뿌리채소의 향으로 시작해 셀러리악과 비트, 구운 밤과 호두로 이어진다. 그 아래에는 젖은 흙과 진흙의 서늘한 기운이 흐른다. 49.7도의 입안은 소금을 뿌린 돼지감자와 순무, 잉크와 녹슨 쇠 같은 금속성이 뒤엉키며 결코 순하지 않다. 여운은 길고 흙내와 짠맛이 이어지며 토닉워터의 쌉쌀함이 끝에 남는다.

oh, vegetables! Quite uncommon in Scotch whisky, celeriac, French beans, beets, salsify… and then roasted chestnuts, walnuts (from the sherry?), artichokes, then damp earth, clay, mud… This is so very Springbank, and so very un-industrial!

oooh… Gives you faith in Scotch, and would shoot you down using lettuce, turnips, salted Jerusalem artichokes, and a curious mixture that would involve plaster, rust, ink, tobacco, and crushed anchovies. What we can anchoïade over here in France. No tomatoes, though. A totally brilliant cask, one that may repel newcomers, which is good for us. No?
