테이스팅 노트
잔을 흔들면 샤르도네를 닮은 맑은 빛이 잔 안에서 흔들린다. 코를 대면 구스베리와 풋사과의 새콤함이 먼저 오고 신선한 버터와 양초 왁스, 흰 아스파라거스 같은 낯선 채소 향이 뒤를 잇는다. 한 모금 머금으면 47도가 뿌리채소와 왁스의 결을 혀 위에 펼치고 청포도 같은 산미와 석회질 감각이 함께 선다. 삼키면 회향과 아니스의 약초 기운이 우아하게 정리된다. 리필 셰리 호그스헤드에서 27년을 보낸 결과가 놀랍도록 절제되어 있다.

Fantastic roots and waxes, tart green fruit (the same apples, greengages, kiwis) and this extraordinary chalkiness that would remind us of some great… terroiry chardonnays indeed. Limestone, do you hear me? I've had a little Auxey-Duresses the other day… that's all I'm saying! In any case, Sponge or not Sponge, this palate is perfect
