잔을 코끝으로 가져가면 1965년에 증류해 30년을 채운 술에서 바닷물과 퍼티, 오래된 페인트통 냄새가 먼저 밀려온다. 재와 밀랍, 분필, 낡은 종이 냄새가 뒤이어 겹치며 세월이 아니라 장소를 먼저 떠올리게 한다. 한 모금을 머금으면 타르와 파라핀, 구리 같은 금속성이 혀를 훑고 레몬과 조개, 소박한 사과 맛이 그 뒤를 따른다. 46도를 삼키고 나면 타르와 옅은 소금기가 중간 길이로 남고 퍼티 냄새가 뒷맛까지 따라붙는다.

it’s crazy, you’d swear it was a 1993, I assure you. Has anything ever changed at Springbank? Paint, tar, paraffin, metallic touches (copper), lemon, petrol, seawater, shellfish (our friends, the whelks) ... Then the expected citrus and just plain apples. Plain but very good apples
