향미 프로필
테이스팅 노트
노즈에서는 셰리 버트에서 비롯된 오렌지 마멀레이드와 건자두의 향이 가장 먼저 두드러지고, 달모어 특유의 진한 단맛이 뒤따른다. 21년의 숙성이 1990년 빈티지 스피릿에 가죽과 다크초콜릿의 묵직한 층을 더한다. 입에서는 흑설탕과 커피, 말린 무화과의 풍미가 진하게 깔리고, 56도의 도수가 구조를 단단하게 떠받친다. 시간이 지날수록 가죽과 담뱃잎의 묵은 향이 천천히 드러난다. 피니시는 오크의 쌉쌀함과 감귤의 산미가 길게 발전하며, 셰리 숙성의 깊이가 또렷하게 균형을 이루는 한 잔이다.

But indeed, it’s close to those lovely old VORS they have in Jerez, between old Corinth raisins and precious walnut cakes. You could almost describe it as ‘bodega-y’, with these whiffs of old wine cellar. I mean, a proper Jerezian winemaker’s (or breeder, a.k.a. almacenista), bodega.
