잔을 코앞으로 당기면 스카이 섬의 탈리스커답게 짭조름한 해풍과 후추, 옅은 훈연의 향이 차례로 솟는다. 한 모금 머금으면 버번 호그스헤드가 빚은 보리 단맛 위로 검은 후추의 알싸함과 바닐라가 번진다. 23년이 다진 결을 천천히 삼키면 바다 소금과 매콤한 온기가 입천장을 덮고, 숨을 내쉴 때마다 해변의 짠맛이 되살아나 오래 맴돈다.
