잔을 흔들어 향을 깨운 뒤 코를 대면 스카이 섬 탈리스커 1988 특유의 후추 같은 매운 기운과 옅은 피트 연기, 바닷내가 함께 솟아오른다. 한 모금 머금으면 45도의 술이 훈제 향과 시트러스, 짭조름한 소금기를 굴린다. 섬의 거친 풍토가 이 위스키에 또렷한 후추 맛을 새겼다. 삼킨 뒤 매운 연기와 바다의 여운이 길게 맴돈다.
