잔을 가볍게 흔들면 옅은 황금빛 너머로 짭조름한 바다 연기가 코끝에 먼저 닿는다. 스카이 섬 탈리스커다운 후추의 매콤함과 굴, 옅은 토탄향이 차례로 올라온다. 한 모금 머금으면 54.8도의 기운이 혀를 휘감으며 흑후추와 소금기, 그을린 보리가 또렷하게 번진다. 호그스헤드에서 14년을 보낸 섬 위스키의 힘을 삼키면, 화한 후추와 바다 미네랄의 여운이 길게 따라온다.
