스카이 섬 카본 마을의 거센 대서양 바람과 화산 절벽의 풍토가 2009 빈티지 탈리스커 12년에 후추 향을 깊게 새겼다. 잔에는 옅은 황금빛이 비친다. 향에는 흑후추와 짠 미네랄, 가벼운 토탄 연기가 또렷이 드러나고 입에서는 48.4도의 도수가 후추의 매콤함과 시트러스, 짠 바닷내를 빠르게 풀어낸다. 여운에는 스카이 특유의 후추 매캐함이 길게 이어진다.
