잔을 흔들어 향을 깨우면 탈리스커 2008이 옅은 호박빛으로 잔 벽을 타고 흐른다. 코끝으로 가져가면 젖은 석탄과 시가 재, 마른 소금기가 스카이 섬의 바다를 그대로 옮긴 듯 올라온다. 한 모금 머금으면 58.2도가 쌉쌀한 오렌지와 짠맛, 특유의 검은 후추를 혀 전체에 밀어붙인다. 5년의 젊은 숙성과 호그스헤드가 만든 이 보틀링은 단맛 하나 없이 건조하게 곧다. 삼킨 뒤에는 바닷물로 끈 재의 향이 짧지만 또렷하게 남는다.
