거친 파도가 부서지는 스카이 섬의 유일한 증류소 탈리스커는 후추 같은 매운 해풍의 위스키로 유명하다. 셰리 버트에서 25년을 보낸 1980년 빈티지는 잔에 짙은 호박빛으로 잠겨 있다. 코에는 말린 과일과 그을린 해초, 검은 후추의 알싸함이 솟아오르고, 50도의 도수 속에서 훈제 향과 흑설탕, 소금기 어린 단맛이 묵직하게 입을 채운다. 여운에는 탈리스커 특유의 후추 같은 매운 열기와 바다 내음이 길게 타오른다.
