잔을 코끝에 가져가면 탈리스커다운 후추 같은 매캐함과 바다 소금, 옅은 훈연 향이 먼저 인사한다. 잔을 흔들수록 1979년 빈티지의 잘 익은 과일과 왁스가 천천히 드러난다. 한 모금 삼키면 17년의 풍미가 후추와 짠 미역, 그을음으로 혀를 강하게 덮고, 63.2도의 높은 도수가 뜨겁게 번진다. 목을 넘기면 스카이 섬의 짭짤한 연기가 매운 기운과 함께 길게 따라온다.
