스카이 섬 카본 만의 거센 바닷바람과 화산암 절벽이 탈리스커 1979 빈티지의 14년 숙성에 후추 같은 결을 새겼다. 잔에는 진한 황금빛이 잠겨 있고 노즈에는 짠 미네랄, 검은 후추, 그을린 토탄의 향이 또렷이 깃든다. 한 모금이 입에 들어오면 64.4도의 강력한 알코올과 함께 짭짤한 캐러멜, 매운 후추, 훈제 생선의 풍미가 묵직하게 입을 채운다. 여운은 스카이 특유의 후추 매움과 짠 바람으로 길게 이어진다.
