스카이 섬의 거센 바다와 화산암 풍토는 탈리스커에 후추 같은 매운맛과 짭짤한 피트를 새긴다. 1979년 증류해 버번 캐스크에서 15년 보낸 이 위스키는 맑은 황금빛을 띤다. 코에는 마른 해초와 흑후추, 옅은 모닥불 연기가 강렬하게 피어오른다. 64.6도에 이르는 기세는 입안에서 후추의 매운맛과 짭조름한 훈연, 시트러스를 거세게 밀어 올린다. 섬 특유의 폭발적인 후추향과 바다 소금기가 또렷하고, 물을 더하면 훈연과 짠맛의 여운이 길게 남는다.
