잔을 천천히 돌리면 30년의 깊이가 응축된 짙은 호박빛이 잔 벽을 두꺼운 알코올 다리로 흘러내린다. 잔을 코끝에 가져가면 탈리스커 특유의 짭조름한 해풍과 흑후추, 잘 익은 자두의 향이 동시에 들이친다. 한 모금을 머금으면 57.3도가 빚어낸 가죽과 마른 향신료, 다크 초콜릿이 입천장을 묵직하게 채운다. 스카이 섬의 바닷바람이 후추 잔향과 길게 이어진다.

oh, this one instantly reminds me of the style of the old official 12 from the 80s. It’s no big dram, it’s rather very elegant and slightly subdued, all on various oils including olive, then apple peeling, fresh walnuts, lemon zests, shellfish (say clams), beech smoke… What’s quite stunning is also how it becomes very peppery after that, although it’s no big blasting pepper. perfect, just perfect. More presence than in the nose, it’s fatter, more potent, more lemony and candied, and saltier as well. The clams are back, tons of lemon drops, some pepper again (black)… gets then very mineral, extremely zesty. With water: more of the same, with a faint dryness from the oak
