잔을 코앞으로 가져가면 카피르 라임과 코코넛이 먼저 오고 곧 그을음과 훈제 베이컨이 따라붙는다. 소금 친 땅콩과 절인 레몬, 짠 감초가 겹치며 피노 셰리 벗의 마른 짠맛이 배경을 잡는다. 56.3도의 한 모금은 기름지게 입을 채우며 타르와 해초, 젖은 밧줄의 인상을 남긴다. 삼키면 소독약 같은 약재 기운과 갯내가 길게 이어져 해안 증류소의 성격을 끝까지 밀고 간다.
