테이스팅 노트
잔을 코끝으로 들어 올리면 맑고 팽팽한 광물의 냄새가 먼저 다가온다. 몇 번 돌리면 밀랍과 삼베, 기계유와 양모 기름이 뒤따르고 흰 꽃잎이 그 사이를 지난다. 한 모금을 머금으면 분필 같은 레몬 산미가 또렷하게 서고 결정화된 꿀과 풀 냄새 도는 올리브유가 이어진다. 여덟 해 숙성에 43도라는 스펙이 무색하게 긴장이 단단하고, 삼킨 뒤에는 그을음과 후추가 마르게 남는다.
