잔을 가볍게 돌리면 진한 호박빛이 유리벽을 따라 매끄럽게 미끄러진다. 코끝을 가져가면 세컨드필 셰리 버트에서 16년 익은 아벨라워의 건포도와 오렌지, 구운 견과 향이 따뜻하게 올라온다. 한 모금 머금으면 59.4도의 도수가 혀를 데우며 말린 과일과 다크초콜릿, 흑설탕이 번진다. 넘긴 뒤에는 셰리의 둥근 단맛이 입천장에 또렷이 깃들어 머문다.
