금빛이 잔 안쪽에 매끄럽게 걸린다. 셰리의 흔적은 뜻밖에 옅고 대신 왁스의 기름진 결과 빻은 분필, 이탈리아식 레몬 소스의 산미가 앞장선다. 풋사과와 갓 바른 회벽, 그을음의 냄새가 그 뒤를 따른다. 53.8도의 입은 날카롭고 서늘하다. 붕대와 광물, 레몬즙의 신맛이 효모의 기운과 부딪히며 좀처럼 타협하지 않는다. 여운은 길고 깨끗하게 레몬과 기름, 분필의 감각으로 이어진다.

With water: lemon juice, grass juice, crushed chalk, paraffin. All very basic ingredients, I agree. As my dear mother used to say about wine, why pay hundreds then? She was right!
