버번 배럴과 올로로소 셰리 버트라는 두 결의 우드가 36년의 시간 속에서 토마틴의 캐릭터를 빚어낸다. 노즈에는 잘 익은 살구와 마멀레이드, 호두가 가장 먼저 올라오고 그 뒤로 옅은 셰리 단맛과 마른 우드 향이 따라붙는다. 입에서는 마른 무화과와 캐러멜라이즈된 배, 옅은 시나몬이 부드러운 질감으로 흐르고 46도의 알코올이 잘 정돈된 균형을 보여준다. 짙은 황금빛 잔, 여운은 마른 견과와 오크 스파이스로 길게 머문다.
