잔을 코끝에 가져가면 올로로소 셰리 버트에서 32년을 보낸 1981년산 토민틴의 짙은 건과일 향이 가장 먼저 떠오른다. 42.3 도수의 절제된 무게가 잔 안에 깊게 머문다. 한 모금을 머금으면 시간이 만든 두꺼운 질감이 혀를 부드럽게 누른다. 건자두와 무화과 잼, 구운 호두가 차례로 따라온다. 삼킨 뒤에는 오래된 가죽과 다크 초콜릿이 길게 이어진다.
