Tasting Notes
잔을 코끝에 가져가면 그을음과 젖은 자갈, 담뱃재 같은 짙고 거친 피트 향이 강하게 올라온다. 잔을 흔들면 훈제 생선과 소금물, 올리브의 짭짤한 결이 그 아래로 드러난다. 아일라 킬호만 2008, 버번 캐스크에서 7년을 보내 46도로 병입한 초기 빈티지다. 한 모금을 머금으면 재와 쌉쌀한 오렌지, 소금기와 옅은 캐러멜이 거칠게 부딪친다. 삼킨 뒤에도 가죽과 시트러스, 재의 기운이 혀에 오래 남는다.

much, much dirtier than the Machir, and you see, we love dirt in our whiskies. Soot, damp gravel, saltpetre… In fact it’s got something of Longrow, which just can’t be bad news. Cigar ashes, smoked fish, brine, new plastic, engine oil, moss… All great!
restaurant Palate
oh very excellent! Same dirty side, ashes, sooty things, bitter oranges, plenty of salt, brine, our beloved olives, a touch of caramel and raisins, caraway… Well I guess I don’t have to oversell it
timer Finish
quite long, extremely well constructed, always appropriately dirty, a little leathery, citrusy (cleans the dirt), ashy…
