잔에 담긴 금빛이 맑고 옅게 흔들린다. 코에는 커스터드와 갓 부친 팬케이크의 단내가 앞서고, 그 뒤편에 톱밥과 밀가루, 육두구와 계피가 조용히 깔린다. 40도로 낮춘 도수 탓에 입안은 순하게 열리며 오크의 마른 결과 커스터드, 시럽 같은 단맛이 이어지고 라벤더와 호밀의 향취가 살짝 비친다. 폼 파스가 고른 이 열한 해 숙성 켄터키 버번의 여운은 짧고 나무 기운이 앞서지만, 끝에 남는 감초의 뒷맛이 제법 곱다.
