잔을 흔들어 향을 깨우면 새 오크를 강하게 태운 통에서 온 달콤한 그을음이 먼저 코를 두드린다. 61.4도라 코를 조금 떼고 맡아야 옥수수 시럽과 바닐라 크림이 제대로 잡힌다. 소량을 혀에 굴리면 메이플과 태운 설탕이 두껍게 밀려들고 뒤이어 육두구와 후추가 알코올을 타고 번진다. 물 몇 방울을 더해 다시 삼키면 구운 옥수수와 캐러멜이 유순해지며 11년의 나무 향이 길게 따라온다.
