잔을 들어 올려 흔들면 살구빛이 도는 옅은 호박색이 유리 벽을 부드럽게 타고 내린다. 코를 가져가면 바닐라와 코코넛이 먼저 열리고 마멀레이드, 가죽과 담뱃잎이 차례로 겹친다. 한 모금을 머금으면 50.8도라는 도수가 무색하게 달고 매끄러워 파인애플과 배 같은 절임 과일, 옥수수 시럽과 계피가 이어진다. 1996년 원액을 20년 두었다가 카데나스가 175주년으로 담은 이 병은 삼킨 뒤 빵과 페이스트리 같은 고소함이 남는다.

very sweet, very easy, with many preserved fruits (pineapples, pears) and even more corn and maple syrups. This baby would go well on pancakes. Some fudge, and the expected cinnamon. With water: sweeter and fruitier yet. Cranberries, pomegranates, marshmallows, tinned pineapples… What’s quite miraculous is the oak never gets totally dominant
