잔을 가만히 흔들다 멈추고 코를 가져가면 팝콘과 누가, 라벤더 같은 향이 먼저 오고 팬케이크 시럽 같은 단내가 뒤를 따른다. 물을 몇 방울 더하면 오래된 책과 등나무꽃, 금속을 닦은 듯한 냄새까지 드러난다. 한 모금을 머금으면 64.9도의 날것 그대로의 알코올과 소나무 목재, 프로폴리스의 쓴맛이 앞선다. 2021년에 카데나스가 담은 이 12년 숙성 버번은 물을 더해야 겨우 균형이 잡히고 여운은 짧고 건조하게 끊긴다.
