air Nose
typical raisiny sherry but it’s not a monster, not at all, rather a whispering olorosoed Speysider. Roasted nuts and blackcurrant leaves and buds, walnuts, a little tamarind, whiffs of old wood, old red Burgundies… Becomes drier and drier, with a little leather, old pencil box, a slight dustiness, old papers, maybe a little soot, coffee beans (freshly opened pack of coffee)… Little fruits in this one
restaurant Palate
easier, rather fruitier and smoother but also a little tannic and tea-ish after a few seconds, with notes of grape pips, apple peelings, fresh walnuts, green tea… Also a little mint, some ginger, bitters…
timer Finish
long, on marmalade and ginger. Quite some cinnamon and mint as well
