Tasting Notes
셰리와 버번 캐스크를 나눠 담은 발레친의 이 더블 캐스크는 통의 조합 자체가 이야기의 출발점이다. 피트를 입힌 에드라두어 원액이 8년을 보내며 46도의 도수 아래 살구와 잘 익은 바나나, 은은한 마지팬 향을 향에서 드러낸다. 입에서는 파인애플과 레몬 마멀레이드의 달큰함 위로 훈연의 기운과 꿀이 겹치며 풍성하게 번진다. 황금빛과 함께 살짝 채소를 닮은 스파이시하고 짭조름한 여운이 길게 이어진다.

it has troubles talking at this very high strength, let’s add water right away (but it seems that there are nice notes of apricots). With water: listen, I’d love to bash this crazy wine finishing (and god knows Yquem is great wine) but contrarily to ‘Tokaj’ versions that were really too much, this is very, very enjoyable. Not sweetish at all, rather balanced, kind of phenolic, superbly fruity, on apricots, ripe bananas, quinces and herbal tea (camomile) and then marzipan and nougat. Works very well (I’m afraid)
restaurant Palate
punchy, sweet and fruity, all on pineapple drops and hot lemon marmalade. Very hot! With water: Edradour’s slightly ‘tricky’ character shines through for a short while but then it’s all bananas flambéed, tinned pineapples, brioche and apricot pie, with also quite some honey
timer Finish
long, a little more vegetal and spicy now, as well as a little salty
