Tasting Notes
잔을 코끝에 가져가면 에드라두어 12년 칼레도니아가 특유의 가죽 같은 인상과 함께 밤꿀과 훈제한 햄의 향을 풀어낸다. 향을 들이켜면 옅은 장뇌와 부싯돌 같은 미네랄이 스치며 올로로소 셰리 마무리의 깊이가 더해진다. 46도의 술을 한 모금 머금으면 마롱글라세와 오렌지 케이크, 마멀레이드와 카다멈이 크리미한 질감 위로 번진다. 삼킨 뒤에는 초콜릿을 입힌 오렌지 껍질의 달콤쌉쌀한 끝맛이 입안을 코팅하듯 머문다.

sometimes some Edradours are difficult because of their, say unusual profile, but sometimes that profile can be an asset, especially when it’s not too obvious. Yes, talking about that kind of soapiness that, in fact, isn’t really soapy, rather ‘bizarrely leathery’ if you see what I mean. Anyway, it’s well here in this Caledonia but blended with several very nice aromas such as chestnut honey, cured ham (Jabugo, really) and just touches of camphor that go very well with the whole. Also some flinty notes and just wee whiffs of gunpowder
restaurant Palate
I think this one’s got all the good sides of Edradour. Marrons glacés, orange cake, marmalade, some leather and chlorophyll (gums), hints of kummel and cardamom, grapefruits… Nice profile, probably cleaner than usual. Liquorice allsorts. Pleasant, creamy mouth feel

rather long, coating, a tad jammier now. Chocolate-dipped orange zests
