스페이사이드의 벤리악은 이탄을 입힌 몰트에 포트 피니시를 더해 독특한 조합을 시도한다. 토니 포트에서 마무리한 17년산 솔스티스는 살구빛 도는 호박색을 낸다. 코에는 훈연을 머금은 블랙커런트와 붉은 복숭아가 낯설게 어우러진다. 50도의 입안은 베이컨과 크랜베리, 블러드 오렌지가 뒤섞이며 체리 줄기 같은 허브티의 결이 따라온다. 여운에는 훈연한 카시스의 잔향이 길게 남는다.

indeed it is unlikely. Blackcurrant-flavoured Jell-O made with smoked water, Beaujolais that would have been stored near an old oil stove, smoked red peaches… And all that. And yet, there is a feeling of oneness that’s very… intriguing
restaurant Palate
well, indeed, vive la difference. It’s a little rough around the edges, and there’s really a lot of bacon, cranberries and blood oranges, but the combo kind of works despite all these odd aspects. I also find a lot herbal tea, around cherry stems or blackcurrant buds. Indeed, it is ‘spécial’, in the French meaning of that word. Oh forget…
