잔을 코앞에서 천천히 돌리면 캐러멜과 마른 무화과가 순서대로 열린다. 액체는 짙은 갈색으로 벽을 따라 굵은 다리를 그린다. 한 모금 머금으면 단맛이 먼저 오고 호밀의 매운맛이 곧바로 뒤를 잇는다. 물을 두어 방울 떨어뜨린 뒤 다시 넘기면 무화과의 단맛이 앞으로 걸어 나온다. 10년 숙성이 만든 탄닌이 목 안쪽에서 마르게 조이며 마무리된다.
