this is more polished, rounder than both Linkwoods. It’s all on butterscotch, maple syrup, earl grey tea and vanilla, with some apple peelings in the background as well as a little varnish and bubblegum (just a little). With water: a beautiful earthiness. Moss, humus, damp pinecones and needles…
restaurant Palate
high quality American oak. Vanilla and various stewed fruits, redcurrants, a little aniseed, bitter oranges, honey, crispy cereals. Excellent body, its not too hot at almost 60% vol. Also nice touches of rye coming through (from the cask’s previous content? Would that be possible?) With water: creamy, extremely well balanced. Quality white oak speaking

long and fruity, with a great spiciness in the aftertaste (mix for mulled wine). Gingerbread and touches of wasabi
