리벳 강이 흐르는 외딴 골짜기의 글렌리벳은 스페이사이드 몰트의 원형을 빚어온 증류소다. 2007년 빈티지를 퍼스트필 셰리 호그스헤드에서 열 해 익힌 시그나토리 보틀링은 짙은 호박빛을 띠며, 건포도와 오렌지, 정향 향이 진하게 솟는다. 66.6도의 강렬한 도수에 물을 더하면 무화과와 다크토피, 시나몬이 진하게 번진다. 여운에는 셰리의 단맛과 따뜻한 향신료가 길게 이어진다.
