yes it’s lightly acidic but in a very nice way, between lemon juice and seawater. In truth, this baby smells just like a huge plate of oysters, while the smoke is kept at bay (haha). big and very briney, with just touches of these plastic/metal notes that could be found in these batches in my experience. So, good news. Then lemon juice plus kippers, litres of brine and a dozen oysters

long, extremely briney. Metallic touches in the aftertaste as well as a little cardboard and paraffin
