totally spirit driven indeed, you're almost nosing a fresh baguette covered with chalk and light acacia honey, plus some cracked pepper, porridge and muesli. It's very simple, but in this case that's almost the opposite of a fault. With water: same, perhaps even chalkier. Drops of ginger tonic and lemon marmalade

restaurant Palate

thick, creamy, almost syrupy, with superb lemons and once again some chalk, bread and beer. When simplicity is an asset. With water: some chalky limoncello and a wee floral side. Edible flowers, pansies, borage…

timer Finish

medium, on the same profile for a while, with grapefruits taking over in the end
