Tasting Notes
잔을 코끝에 가져가면 잘 익은 미라벨 자두와 마르멜로 젤리, 황금빛 건포도의 향이 링크우드다운 산뜻함으로 올라온다. 잔을 흔들면 밀랍과 밤꿀, 옅은 금속성 뉘앙스가 그 뒤로 이어진다. 잔을 다시 흔들어 맡으면 잘 익은 배와 옅은 향신료가 더해지고 잔 안에서 짙은 빛이 무겁게 자리를 잡는다. 한 모금 머금으면 53.5도의 진한 질감 위로 대추야자와 배, 무화과의 단맛에 카레와 시나몬, 넛맥의 향신료가 겹쳐 번진다. 삼키고 나면 14년 페드로 히메네스 호그스헤드다운 여운이 후추 섞인 허브의 씁쓸함을 남기며 길게 이어진다.

oh, ripe mirabelle plums and quince jelly, is this even beatable? And all these golden juicy sultanas, these whiffs of beeswax, of chestnut honey… We're certainly reminded of a distillery in Dufftown that starts with a B. I mean, its name. With water: ripe plums, ripe plums, ripe plums. A tiny metallic touch too (old coins, old copper wire and stuff)
restaurant Palate
rather a lot of candied fruits, dates, pears, figs, also spices, curry, cinnamon, nutmeg… It's not that it is very strong, but it feels pretty strong. Or is it me who's feeling weak? With water: awesome at first, even if some bitterish, drying herbs were awakened too. Peppered chartreuse, not too sure after all
