Tasting Notes
스페이사이드 글렌파클라스가 1959년에 채워 둔 셰리 캐스크가 34년의 시간을 머금고 화이트 앤 화이트 임포터스의 손을 거쳐 잔에 도달한다. 진한 적갈색이 잔에 깊이 잠긴다. 향에서는 잘 익은 건포도와 짙은 흑설탕, 마른 무화과의 결이 차례로 떠오른다. 잔을 천천히 흔들면 그 사이로 옅은 가죽과 시가의 결이 한 켜 더 얹힌다. 50.2도의 입안은 셰리의 진한 단맛과 다크 초콜릿, 가죽의 무게를 펼쳐내고 두 번째 모금에서는 마른 자두의 결이 또렷해진다. 끝까지 천천히 이어지는 여운 속에는 글렌파클라스 특유의 셰리 결이 잔향에 깊이 새겨진다.

more discrete but maybe more elegant than the huge 1961 at first nosing, starting and developing rather marvellously on all kinds of herbal and resinous aromas. Pine wood, moss, eucalyptus, cedar wood, crystallised lemons (rare in old Glenfarclas), mint... Then dried pears, citrons, quince, kumquats... This is absolutely superb!
restaurant Palate
excellent, truly excellent. Very resinous (luv’ that), very minty and very camphory. All kinds of cough sweets and syrups reunited or something like that, pine sweets as well. Plus crystallised oranges and lemons and spices (a little pepper, cinnamon from the wood and dried cardamom.)
