air Nose
very expressive, starting on apricot jam and honey, with a very discreet smokiness in the background. Gets then beautifully fudgy and caramelly, with a growing meatiness from the sherry casks – but I wouldn’t say this is ‘very sherried’ as such. Whiffs of hay. Beautiful nose, very aromatic and elegant, that’s got something of Balvenie. Gets even more honeyed after a few minutes
restaurant Palate
indeed, this is very round and creamy, all on honey again, old sweet white wine, sultanas and toffee/nougat. Maybe not extremely complex, so it won’t make it to 90, but bl**dy good for sure. Gets a little salty
timer Finish
very long, on buttered fudge and dark toffee, a little drier now. Hints of strawberry jam in the aftertaste
