starts very fruity, on rather extreme notes of both ripe and overripe apples, with superb notes of soot and coal in the background. Fantastic freshness. Develops on heavy – but beautiful – notes of shoe polish and old walnuts. That’s pretty all but the general profile is absolutely perfect
restaurant Palate
sweet, even sugary again (cane sugar), all that being coated with tannins. Again, it’s a little simple but mouth feel and balance are perfect. Slight saltiness. Caramel flavoured tea. Apple pie

long, vibrant, with an ashy aftertaste
