오크니 섬의 거센 바닷바람과 헤더 피트가 30년 숙성된 하이랜드 파크의 뼈대를 이룬다. 짙은 호박빛 잔에서 헤더 꿀과 말린 과일, 은은한 훈연의 향이 우아하게 어우러진다. 입에서는 오랜 숙성이 빚어낸 건과일과 꿀 위로 향긋한 헤더 연기가 스민다. 51도의 도수가 단맛과 훈연의 균형을 섬세하게 잡는다. 꿀과 옅은 연기의 여운이 길게 남는다.

green fruits, lime zest, chalk, ink, lemon rind, olive oil, a vibrant waxiness and some beautifully nervous fruity notes of lemon drops, lychee and apricot. With a little time some very delicate medical notes of cough syrup and throat lozenges emerge. With water: gets leafier and fruitier with water. Some pine resin and a little lemon icing
restaurant Palate
Lots of orange oils, herbal liqueurs, jasmine tea, green olives, yellow flowers, white pepper - a rainbow whisky! More cough medicine, more subtle waxiness and some mustard notes. Feels mature but also wonderfully lively and sprightly for its age. With water: gets drier now, veering more towards pastries, fresh breads and dried herbs. Some black olives in olive oil and rosemary. Really works beautifully with water
