구릿빛이 도는 호박색이 잔 안에서 은은하게 빛난다. 오크니 섬에서 1988년에 증류해 셰리 캐스크에서 28년을 보낸 하이랜드 파크는 섬 특유의 히스 꿀과 연기를 함께 머금는다. 코끝에는 헤더 꿀과 말린 과일, 옅은 토탄 연기가 차곡차곡 쌓이고 입에서는 오렌지 마멀레이드와 정향, 은은한 훈연이 균형 있게 흐른다. 51도의 단단한 여운에는 달콤한 연기와 오크의 향신료가 길게 깃들어 있다.
