잔을 천천히 돌리면 1959년 하이랜드 파크가 25년 셰리 우드에서 견뎌낸 묵은 헤더 꿀과 짠 미네랄 향을 풀어 놓는다. 잔을 코끝에 가져가면 오크니 섬 특유의 청량한 바람이 셰리 단맛 뒤에서 또렷이 일어난다. 한 모금을 머금으면 46도의 점잖은 도수가 마른 자두와 옅은 페놀을 동시에 따라간다. 마지막에는 빈티지 더피 보틀 특유의 묵은 향이 입가에 오래 남는다.
