Tasting Notes
퍼스트 필 유러피언 셰리 오크 버트에서 13년을 보낸 시간이 하이랜드 파크 2004의 캐릭터를 결정한다. Single Cask Series의 63도가 셰리의 짙은 영향을 정면으로 드러낸다. 향에서는 짙은 무화과와 마른 자두, 오크니의 옅은 헤더 연기가 코를 사로잡는다. 입에서는 다크 초콜릿과 건포도의 진한 단맛이 묵직하게 입을 채우고 가죽의 쌉쌀함이 균형을 단단히 잡는다. 색은 깊은 마호가니빛이며 여운은 오래된 셰리의 잔향으로 길게 따라간다. 시간과 우드의 대화가 매끄럽게 정제되어 잔향에 깊게 깃든다.

air Nose
hot clay, plastic and strong black tea! A pretty hot nose at first, lots of spiky alcohol. Takes a good couple of minutes or so for the heat to blow away, then there’s some leafy tobacco notes, crushed walnuts and cherry kirsch. Needs water I suspect. With water: plain brown bread, some cough syrup, rather jammy with some syrupy red fruit notes. Still a bit tough I feel
restaurant Palate
cherry jam on brown bread. Seriously, there’s quite a lot of cherries in this one for some reason. Boiled cherry sweets and maraschino notes. Also strong black coffee, bitter chocolate, toasted almonds and plain old marzipan. Not as brutal as on the nose at first. Some sweet pastries and a little olive oil. With water: there’s an acrid edge and the overall impression is still one of heat, biting wood spice and this general jammy quality. Not totally convinced by this one
timer Finish
Medium and rather on charred wood, some menthol cigarettes and black pepper. Some wee floral hints in the aftertaste
