잔을 살짝 흔들면 작은 퍼킨 캐스크에서 14년을 보낸 하이랜드 파크 바이킹 소울 캐스크의 짙은 호박빛이 잔벽을 따라 흐른다. 코끝에 가져가면 오크니 섬의 짭조름한 헤더 훈연과 셰리의 건포도, 그리고 가죽 향이 동시에 인사한다. 한 모금을 머금으면 55.9도가 묵직하게 입천장을 덮으며 다크 초콜릿과 오렌지 껍질이 굴러간다. 삼키고 나면 퍼킨다운 응집된 우드 스파이스와 오크니 특유의 헤더 훈연이 길게 이어진다.

ok, actually it's not an identikit sibling. This one's a little tighter, leaner, more narrow and more mineral. Some notes of boot polish, animal furs, marrow, coffee and more of these spiced dark fruits. Feels ever so slightly fresher and less on overtly active wood than the HPAS bottling. With water: more aligned now, lots of wood spices, resins, strong black teas, salted liquorice and star anise
restaurant Palate
punchy, directly on black coffee, liquorice and star anise. Weighty, spicy and clean. With water: a notch fruitier, hot cross buns with cinnamon and singed raisins and sultanas. Hessian cloth and roof pitch
timer Finish
long, slightly tarry, bitterly herbal, dark chocolate and these ever-present wood spices
