스코틀랜드 최북단 오크니 제도의 청량한 바닷바람 속에서 자란 하이랜드 파크 싱글 캐스크다. 잔에는 앰버빛이 깊게 어린다. 향은 가죽과 쓴 초콜릿, 코코아 가루에 당밀과 밤꿀, 옅은 화약 내음이 겹친다. 58.9도의 입안은 셰리가 진하게 배어 자두와 초콜릿, 허브에 후추와 블랙커런트가 얽힌다. 섬의 헤더 피트와 바닷바람이 새긴 균형이 또렷하다. 여운은 매우 길고 후추의 알싸함이 오래 남는다.

much less winey than the G&M but even more on leather and huge notes of bitter chocolate and even cocoa powder. Also hints of molasses, rich honey (chestnut), ham, onion sauce or jam, chutney… A wee chalkiness and quite some gunpowder again over this debauchery ;-). With water: more resin, putty, marzipan, custard, ‘new car interior’, pipe tobacco…
restaurant Palate
this time it’s this one that’s more winey, more classically sherried, all on prunes and chocolate, with a good deal of herbs in the background. Mint, Jägermeister, pepper and blackcurrant jelly (and the tea made out of leaves or buds). A tannic feeling. With water: a tad more elegant than the G&M, more on fine herbs and several tertiary notes, around bitter almonds and Bénédictine
